Ingredients


Makes: 4 servings
  • 1 can (14 oz/398 ml) chickpeas
  • 1 zucchini
  • 1 sweet potato or yam (about 1/2 lb/250 g)
  • 1 1/2 Tbsp (23 ml) olive oil
  • 1 Tbsp (15 ml) Rosemary Garlic Seasoning
  • 4 pork loin centre chops (about 2.2 lbs/1 kg)
  • 4 tsp (20 ml) Souvlaki Seasoning

Preparation


 
  • Preheat oven to 425° F. Line Sheet Pan with Bake & Roll.
  • Drain and rinse chickpeas, pat dry. Place on pan.
  • Slice zucchini on the diagonal. Cut peeled sweet potato in half lengthwise; thinly slice halves. Place on pan with chickpeas. Coat with 1 tbsp oil and Rosemary Garlic Seasoning; spread out in a single layer on pan.
  • Coat chops with remaining oil and Souvlaki Seasoning. Arrange on top of veggies.
  • Roast, without stirring, until pork is cooked through, about 30 min.

TIP: Prep all the ingredients while the oven preheats then pop it into the oven and bake everything at once.

TIP: Swap pork for boneless, skinless chicken breasts or tofu steaks
