1⁄4 cup water
2 tsp oil
4 small whole-grain or corn tortillas
1 cup canned black beans
1⁄4 cup grated low-fat cheese, your choice
- In mixing bowl, whisk eggs with dip mix and water and set aside.
- Heat oil in a fry pan over medium heat. Add egg mixture. Stir constantly for 5–6 min or until eggs are set.
- Microwave tortillas until warm and place on individual plates. Meanwhile drain and rinse black beans.
- Top each tortilla with egg mixture and black beans, add salsa and cheese. Fold over or roll up and serve immediately.
