These are delicious, with a slightly sweeter taste than potatoes, and just as satisfying!
2 - 3 medium carrots, peeled
2 - 3 parsnips, peeled
1 tbsp oil
- Preheat oven to 400 °F (200 °C).
- Cut carrots and parsnips in half, widthwise, and then cut into sticks.
- Place in a bowl with seasoning and oil, tossing to coat.
- Arrange in a single layer on a crisper. Bake for 20 minutes, until lightly crispy, but cooked.
Serve your veggie fries standing upright in a teacup, or small stoneware bowl, accompanied by your favourite Epicure dip!
Experiment with other firm root vegetables, like sweet potatoes and yams. Cooking time may vary.
